How to sneak in more fruits and vegetables


As I scoured my house looking for junk food last night, I couldn’t find any, so I was forced to eat an orange. It didn’t really have that sweet or salty factor that I was searching for, but it did have another factor—the healthy factor. At first, my brain was puzzled. What’s this? Something healthy? As I ate it section by section, something weird began happening. I actually felt … healthy.

You see, it’s been a while. I may be a health promotion specialist, but I hate cooking and I don’t really eat too much fresh produce. But I looked into how to sneak fruits and vegetables into my diet, and it’s actually not as hard as it seems.


Oranges, apples, and bananas are the easiest fruits to transport. Just make sure to wash them off before you eat them.


Add fruit to yogurt and oatmeal. Add sliced bananas to cereal.

Roasting veggies

It’s not hard to buy some potatoes, sweet potatoes, carrots, and other root veggies, cut them up, pour on some olive oil and salt, and roast them for 45 minutes in the oven. Roasted vegetables are super-delicious, and what could be healthier?


Buy a frozen pizza and cut up tomatoes, fresh mushrooms, a pepper, and an onion. Load up the pizza and cook it. Add carrot sticks to eat along with the pizza.


Mash up an avocado and add a little salt. Eat this healthy ‘guacamole’ with carrot sticks instead of chips. Buy some salsa and eat it with slices of cucumbers or carrots. Or, better yet, make your own salsa. Make your own low-fat dip or buy low-fat ranch and dip a bunch of veggies into it.


Add plenty of veggies to your morning scramble. No time? Wait until the weekend and treat yourself to a big, healthy breakfast of a veggie omelet, pure orange juice, and lovely sliced strawberries and bananas with fat-free yogurt.


Make a healthy salad at the salad bar by piling your plate high with lettuce, spinach, tomatoes, cucumbers, chickpeas, olives, peas, corn, peppers, cauliflower, shredded carrots, a sprinkle of cheese and use a bit of low-fat dressing.


Add sliced zucchini and other veggies to your store-bought tomato sauce. Add a side salad to your pasta and you’re looking at a great meal.
